Rosanne LeBlanc of Gloucester knows how to make a biscotti stand out from the crowd.
Rocky Road ice cream is a favorite with both kids and adults, but she’d never seen it as a topping for biscotti. With imagination not being in short supply, she thought, “why not make Rocky Road biscotti?”
The resulting delicious and creative topping is a true treat.
Simply drizzle on chocolate, add the walnuts and marshmallows in an “asymmetrical” fashion, add a little more chocolate and set to harden.
If you want to go the extra step, you can make the biscotti from scratch. However, if you don’t, make sure that you select a fresh cookie that is only semi-hardened.
And there is no limit what you can use this topping for — vanilla wafers are one such example.
Rocky Road cookie topping
1 chocolate biscotti or cookie
1 ounce chocolate
1 whole walnut, halved or quartered
5 small marshmallows
Melt the chocolate in a microwave-safe container for 12 seconds, or until melted.
Spread the chocolate on the biscotti, and add walnuts pieces.
Put on the marshmallows, drizzle with more chocolate and set aside for 15 minutes to set.
Serve and enjoy.
