COOKING TIP

Make mine a bushel

Greens lose a tremendous amount of volume during cooking. And what starts out looking like enough spinach, chard or collards to feed an entire neighborhood winds up barely feeding a family once cooked. To prepare large quantities of greens, fill your kitchen sink with water. Then, immerse the greens, swish vigorously to loosen dirt, drain the sink and repeat. To cook, you'll want a large pan. The key is to add greens to the pan in batches, allowing them to cook down before adding more.
