Grilled cheese goes green

Baby spinach adds color, nutrition to sandwiches

This week, encourage your child’s creativity by having a Grilled Cheese Night. Perfect for using up any leftovers from the holidays, get your child excited about cooking and eating healthy, by allowing them to prepare their own Spinach Grilled Cheese Sandwiches.

From roasted veggies and cooked meats to deli meats and assorted cheeses, and a thin layer of baby spinach for extra nutrition, your child will begin to develop a strong foundation for healthy eating habits throughout his or her life.

Encourage your child to try new ingredients and instill pride in a job well done with this recipe.

Spinach Grilled Cheese Sandwiches

Difficulty: Easy

Servings: 1 - 2

Preparation Time: 5 minutes


4 slices wheat bread

4 teaspoons butter

4 slices cheese

1/2 cup baby spinach

4 slices deli meat, optional


1. Butter on side of each slice of bread.

2. Heat a skillet over medium- low heat. Place one slice of bread, butter side down, in the skillet. Top with a slice of cheese, thin layer of spinach, the second slice of cheese and another slice of bread, butter side up. For a more robust sandwich add slices of deli meat.

3. Toast in the skillet until golden brown, flip and toast the other side. Cut into triangles and serve.
